With warm weather comes the time to BBQ, or just enjoy a meal outside for that matter. When having an outdoor meal if become difficult to plan what sides to serve. Of course you want fresh picks, but also the classics. One of my favorite summer sides is succotash! It is a perfect combination of fresh items and can be served hot, cold or at room temperature. It also does not take too long to prepare and can be made in advance...therefore it is a perfect choice for summer entertaining!
2 tablespoons extra-virgin olive oil
1 cups chopped onion

1 large garlic clove, minced
3 cups chopped red tomatoes

2 1/4 cups corn kernels cut from 4 ears of corn
2 cups fresh lima beans (from about 2 pounds pods) or 10 to 11 ounces frozen lima beans or baby butter beans, thawed
Heat oil in heavy large skillet over medium heat. Add onion and sprinkle with salt. Sauté until soft and translucent. Add in garlic; stir until fragrant. Add tomatoes, corn, and lima beans. Reduce heat to medium-low, cover, and simmer until corn and lima beans are tender and tomatoes are soft, about 20 minutes, stirring occasionally. Season to taste with salt and pepper.
I actually serve this at room temperature, but it is great hot or cold. It can be made in advance and kept in the fridge overnight. It is a perfectly colorful dish that is simply delicious!
